Raspberry Rugelach

Ingredientes

  • 1 1/4 cups butter 

  • 1/3 cup margarine

  • 230g cream cheese

  • 3/4 cup sugar

  • 2 1/2 cups flour

  • 1 cup raspberry jam

  • 1/2 teacup sugar for sprinkling

  • 1/2 cup cinnamon for sprinkling

  • 1/2 cup melted butter

Preparação

Step 1


Add the butter, margarine, cream cheese and sugar and beat 2-3 minutes, starting slowly and gradually increasing the speed.


Step 2


Add the flour and mix for another 1-2 minutes on low speed.


Step 3


Spread a little flour on a wooden table, place the dough and sprinkle on top also with a little flour so it doesn't stick to the surface or your hands.


Step 4


Knead the dough a little with your hand and refrigerate for 30 minutes.


Step 5


After removing the dough from the refrigerator place it on the wooden surface, dusted with flour, and sprinkle a little more flour over the dough.


Step 6


Roll out the dough with a rolling pin until it is thin enough to roll out. Then spread the jam all over the dough.


Step 7


Spread the cinnamon sugar (mix 1/2 cup sugar and 1/2 cup cinnamon).


Step 8


Cut the dough into 3 thick horizontal lines and roll carefully.


Step 9


With a brush, spread the melted butter on top and more cinnamon sugar.


Step 10


Cut into pieces about 4 cm wide and place on a baking tray with baking paper, spaced about 2 cm wide (the cakes do not rise, but the cream tends to run).


Step 11


Bake for about 20 to 25 minutes at 180º C.
